Go to Town Center and talk to the Commander. Once you join a faction (Vassalage or merc contract like in Warband), you can recruit professional troops from their towns and castles. These can be customized equipment-wise, but are expensive to hire and maintain in numbers, and while better than villagers, they are not as good as medium-high tier professional troops you get from factions. You'll find regional mercenary camps where you can hire 'faction'-specific mercenaries.

You'll quickly learn the prices to look for, but mostly salt <200, pottery <50 and bread/fish <30 usually come in high quantities around Cossack and Crimean lands, or meat<50 and furs <300 in Muscovite territory.
